Ingredients


10 cups apple cider

½ cup packed brown sugar

½ cup frozen lemonade

½ cup frozen orange juice

5 whole cloves

5 whole allspice

1 tsp. ground nutmeg

3 cinnamon sticks


Directions


Tie the whole spices in cheesecloth or a tea infuser. Add to the other ingredients in a large pan or crockpot and heat, stirring occasionally. Serve warm in punch cups or serve cold--adding ice to the punch bowl.

Christmas Reindeer Punch


Ingredients


2 cup orange juice

2 cup lemon juice

2 cup grenadine syrup

6 cup ginger ale

1 cup of strawberries or sliced fruit in season.


Directions


Mix all ingredients except ginger ale and fruit. Pour over block of ice to chill. Just before serving, add the ginger ale and fruit.

Home Made Irish Cream Liqueur


Ingredients


1 3/4 cup Irish whiskey

1.75 cup can sweetened condensed milk

1 cup heavy cream

4 eggs

2 Tbs. cocoa powder

2 tsp. instant coffee

1 tsp. vanilla extract

1/2 tsp. almond extract


Directions


Combine all ingredients and mix in blender. Put into a fifth bottle. Keeps refrigerated up to 1 month. Stir or shake before serving and serve over ice, if desired.

 HOMEMADE EGGNOG.

This is a collection of 4 types of eggnog you can make any of these recipe with or without the

alcohol depending on your guests.

Recipe 1

Ingredients

6 eggs

1 cup sugar

1/2 tsp vanilla

1/4 tsp nutmeg

2 cup milk

2 cup heavy whipping cream

3/4 cup brandy

1/3 cup dark rum


Directions

Chill everything before starting, for best results. Beat eggs until frothy, then beat in sugar, vanilla and nutmeg. Slowly stir in brandy, rum, cream and milk. Chill again, and serve cold.

HOMEMADE EGGNOG. Recipe 2

Ingredients

4 eggs, separated

1 can sweetened condensed milk

1/4 tsp. salt

1 tsp. vanilla extract

4 cups milk

1 cup brandy, optional

Nutmeg

Directions

In large mixer bowl, beat egg yolks until thick and light. Gradually beat in sweetened condensed milk, salt, vanilla, and milk. In small bowl, beat egg whites to soft peaks; gently fold into sweetened condensed milk mixture. If desired, stir in bourbon or brandy. Chill. Pour into chilled punch bowl or serving cups. Garnish with nutmeg. Refrigerate any leftovers.

HOMEMADE EGGNOG. Recipe 3

Ingredients

6 eggs yolks

1/2 cup sugar

2 cup light or heavy cream

2 C. milk

1/8 tsp. salt

2 tsp. vanilla

6 egg whites

Nutmeg


Directions


Beat egg yolks until light. Gradually add sugar and beat until thick. Beat in cream, milk, salt and vanilla. Refrigerate for several hours. Beat egg whites until they hold stiff peaks; fold into egg yolk mixture. Sprinkle with nutmeg.


Low-Fat Eggnog Recipe 4

Just because everyone else puts on weight during the holidays doesn't mean that you have to. Just as delicious with far less fat.


Ingredients


½ sugar

4 egg whites

1/3 cup water

1/4 tsp. cream of tarter

4 cup skim milk

2 tsp. vanilla extract

1/2-1 cup brandy or rum

Nutmeg

Directions

Combine sugar, egg whites, water and cream of tarter in a large non-aluminum metal bowl: whisk to blend. Set bowl over a pan of simmering water, taking care the bowl does not touch the water. Beat with an electric mixer on medium about 10 minutes, until mixture registers 140 degrees on a candy thermometer and is very thick and fluffy. Continue to beat 3 or more minutes. Remove from heat and beat until mixture has cooled slightly. Pour milk and vanilla into another large bowl. Add egg white mixture and brandy or rum; combine gently with a whisk.

Serve well chilled and dusted with Nutmeg. Note: Eggnog will separate when standing, but is easily recombined by whisking.)

Gingerbread Pancakes


Try these cookie-like pancakes during the holiday season.

Ingredients

1 1/2 cup all-purpose flour

1 tsp. baking powder

1/4 tsp. baking soda

1/4 tsp. salt

1/2 tsp. ground ginger

1 tsp. ground cinnamon

1 egg

1 1/4 cup milk

¼ cup molasses

3 Tbs. vegetable oil


Directions


In a small bowl, stir together the flour, baking powder, soda, salt, ginger and cinnamon. Set aside. In a large bowl, beat together the egg and milk, then stir in the molasses, and then the oil.

Add the flour mixture until just combined. Pour a quarter C. of batter for each pancake on a preheated grill. Cook on the first side until the batter if full of bubbles on the surface. Flip the pancake and cook until the second side is lightly browned.


Makes 12 pancakes.

Christmas Chicken or Beef Curry


Festive and spicy, this curry dish is a holiday favorite!

Ingredients

5 Tbs. butter

1/2 cup minced onion

6 Tbs. flour

2 1/2 tsp. curry powder

1 tsp. salt

½ tsp seasoning

1 1/2 tsp. sugar

1/2 tsp. powdered ginger

1 cup chicken broth

2 cup. milk

4 cups chopped beef or chicken

1 tsp. lemon juice


Directions


Melt butter in a double boiler. Add onion. Simmer until tender. Stir in flour and other dry

ingredients. Gradually stir in chicken broth and milk. Cook over boiling water, stirring until thickened. (Could be 10 minutes). Add chicken or beef and lemon juice. Heat to serving temperature.

Serve over fluffy rice with 2 or more accompaniments on top: coleslaw, diced bananas etc.

Yield: 6 generous serving.

Christmas Tree Bread


Try this tree-shaped bread for your Christmas and New Year dinner. It's a really cute presentation on the table and tastes great too!


Ingredients


2/3 cup milk

1/2 cup sugar

1 large egg, yolk and white separated

¾ cup dried fruit

2 1/2 cup all-purpose flour

1 Tbs. baking powder

1 1/2 tsp. pumpkin pie spice or 3/4 tsp ground cinnamon and 3/4 tsp ground cloves

1/2 tsp. salt

1 stick cold, unsalted butter, cut to small pieces

Granulated sugar


Directions


 Measure milk in a 2 cups. measure, add sugar and egg yolk, stir to mix well. Stir in dried fruit. Let stand until ready to use. Put flour, baking powder, spice, and salt into a large bowl, stir to mix well. Add butter and cut in with pastry blender or rub in with fingers, until mixture looks like fine granules.

Stir milk mixture and pour over flour mixture. Stir with a fork until a soft dough forms. Turn out dough onto a lightly floured surface and give 10 kneads. (If very sticky, let stand 3 or 4 minutes or add a little more flour.)

Cut off about one-fourth of the dough. Put remaining dough on an ungreased cookie sheet at least 16 inches long. Using both rolling pin and fingers, pat and roll dough into a flat triangle about 12 inches tall and 9 inches wide across the bottom. With scissors, make about ten diagonal cuts down each long side of the triangle, cutting to within about 1 inch of the center. Shape a small piece of reserved dough into a trunk at bottom of tree and remaining dough into a "pot."

Holiday Sugar Cookies


Simple and easy! Make the dough ahead of time and pop them in the oven whenever.


Ingredients


1 cup butter or margarine

3/4 cup packed light brown sugar

3/4 cup sugar

2 eggs

2 Tbs. milk

2 tsp. vanilla extract

4 cups all purpose flour

2 1/2 tsp. baking powder

1 tsp. salt


Directions


Combine butter and sugars, beat until fluffy. Add eggs, milk and vanilla; beat well. Combine flour, baking powder and salt; stir into batter. Cover and chill 3-4 hours. Roll out about 1/3 of the dough to 1/8th thickness on lightly floured board. Cut into desired shapes. Bake at 375 degrees on ungreased cookie sheet for 8-10 minutes or until done. Cool, decorate. I use the decorator frosting in the tubes, spread it out and then dip into colored sugar sprinkles.

Classic Holiday Angel Food Cake

Ingredients


1 cup cake flour

3/4 cup granulated sugar

3/4 teaspoon salt

1 teaspoon cream of tartar

1 3/4 cup egg whites, about 13 large

eggs

1 teaspoon vanilla

1/2 teaspoon almond extract

1 cup granulated sugar


Directions


Preheat the oven to 350 degrees.

1. In a bowl, sift the flour and 3/4 cup of sugar together. Set aside.

2. Beat the egg whites in a large bowl until foamy. Add the salt, cream of tartar, vanilla and almond and continue beating, gradually adding the last cup of sugar, until soft peaks form.

3. Gently fold in about one-fourth of the flour mixture. Repeat with the remaining mixture until all the flour is mixed in. Do not stir more than necessary.

4. Scrape the batter into an ungreased tube pan. Bake for 45 to 50 minutes or until done. When done, the cake will spring back to the touch.

Immediately invert the tube pan over the neck of a bottle and let cool in

the inverted position.

Festive Party Jollof Rice 


Recipe:- 

1. 5 Cups Parboiled rice ( not cooked to soft)

2. 5 cups chopped Onion

3. 3 cups blended red bell pepper 

4. 1 cup fresh tomatoes ( optional)

5. 1 cup freshly blended chilli pepper or cayenne pepper 

6. 1/4 fresh pepper (or to taste)

7. 1 can tin tomatoes ( for added colour )

8. 1 cup dried crayfish ( grounded )

9. 1 tlb of nutmeg ( grated ) very important 

10 1 tb ginger paste

11. garlic , curry powder 

12. salt and seasoning cube 

13. veg oil for frying ( if you can use butter it's ok but if not, pls make do with good veg oil 

14. Bay leaves

15. chicken stock 


*PROCEDURE:-*

1.Blend your onion, garlic, ginger, fresh tomatoes( if using), ginger, garlic and fresh pepper together and set aside. 


2. set your dry pot on heat, add vegetable oil to the dry pot, when the oil gets hot, add chopped onion and fry till translucent. add your blended tatashe mixture and fry till water dries up, add your tomatoes puree and continue stirring until the sour taste goes away. 


3. add your chicken stock, crayfish ( little) , seasoning cube, curry powder, salt , nutmeg and bring to boil. add your Parboiled rice (make sure the stock covers the rice. stir to mix very well on a very low heat. drop few leaves ( 5 pieces ) on the rice and cover very tightly to cook until your rice gets soft and water dries off. 


4. Allow your rice to get burnt a little bit so the smoke gets mixed up with the steam and mixes up with the rice. this is how to get the party jollof rice aroma. 


Cook on low heat, preferably cover with aluminum foil paper to trap in heat to the rice.

African Buns

Ingredients

3 cups All-purpose flour

2 1/2 teaspoon baking powder

1/2 cup granulated sugar

1/2 teaspoon salt

1 teaspoon grated lime

1 teaspoon grated nutmeg

1/2 cup milk

4 large eggs

2- teaspoon vanilla

1/4 cup melted butter or vegetable oil

Oil for deep-frying


Direction


In a medium bowl mix all the dry ingredients, flour baking powder, salt, sugar, grated orange, and nutmeg.

Stir in the milk, eggs, vanilla,and oil; mix well until everything has been fully incorporated. The batter should be smooth, thick and spoon able.

In a large, sauce pan pour vegetable oil, until it is at least 3 inches (or about 5 centimeters) high (too little will result in flatter balls), and place on medium heat until oil is 375 degrees.

I use my hands to scoop up the batter; you can do the same or use 2 spoons - one to scoop up the batter, and another spoon or spatula to drop it in the oil- in the shape of a ball. Do not overcrowd the pan. Do so in batches

Fry for a few minutes until the bottom side is golden brown.

Turn the ball over and fry for a few more minutes until the other side is golden brown.

Use a large spoon or something like that to take it out of the oil. I usually place them on napkins right away to soak up some of the excess oil.

If desired, you can roll the finished product in table sugar or powdered sugar to make it sweeter.

puff puff

Ingredients

Flour                         2 cups

Sugar                          5 tablespoon

Salt                               pinch

Yeast                           1/2 tablespoon

Nutmeg                        as desired

Water                          to make it thick

Vegetable oil               for frying


Direction

1, sieve flour and activate yeast by adding sugar and little warm water, leave to prove for some minutes

3, make a hole at the centre of the powdered /floured mixture

4, pour the liquids and mix well,

5, keep in an air tight container and in a room temperature to double its size

6,heat oil and fry.

Easy Holiday Chapman


½ cup Grenadine Syrup

A few dashes of Angostura Aromatic Bitters™

35 cl Fanta Orange

35 cl Sprite

½ an Orange

½ a lemon

Ice cubes

½ an orange

½ a lemon

½ a cucumber



Directions

  1. Put a few ice cubes in the mugs.
  2. Add half a cup of the Grenadine Syrup, this should be about one third of the dimpled mug.
  3. Add a few dashes of Angostura Bitters (to your taste).
  4. Add a squeeze of orange and lemon each.
  5. Share the Fanta equally between the two mugs, do the same for the Sprite. Remember to leave some space because the garnishings will take up their own volume.
  6. Add your sliced garnishings: cucumber, orange and lemons. This list goes on and on, some people even add bananas to theirs 
  7. Top off with Ribena blackcurrant if you have it.(zobo can be used in place )
  8. Stir with the straws and it is ready for drinking!
